4x chicken breast fillets
20ml Sun dried pesto from your local supermarket (Foodies range)
4x slices of mozzarella cheese
4x large fresh Basil leaves or spinach leaves
Olive oil
Salt & Pepper
Preheat the oven to 180C. Place the chicken breast on a chopping board and, using a sharp knife, cut a slit horizontally into the side of the breast to make a deep pocket, but don’t cut all the way through.
Spread a little of the Sundried & Olive pesto inside the chicken fillet pocket.
Place the basil or spinach leaf and mozzarella cheese into the chicken fillet pocket and secure with toothpicks. Season with salt and pepper.
Heat a little olive oil in a frying pan and fry the chicken breast gently on all sides to seal and colour them and then remove from the pan. Place the stuffed breast onto a roasting tray and roast for 15 minutes. DO NOT overcook or your chicken breast will become tough.
