125g butter 185g castor sugar 2 large eggs Grated zest and juice of 1 orange 125g self-raising flour 1 small can of evaporated milk 10ml cornflour Icing sugar for dusting
METHOD:
Beat the butter, 140g castor sugar and the eggs together until light & fluffy. Fold the orange zest, flour and 25ml evaporated milk. Spoon into a greased oven proof dish. Heat the remaining evaporated milk until boiling. Mix together the orange juice, remaining sugar and the cornflour and mix into the hot milk. Pour the milk mixture over the pudding mixture and bake in a preheated oven for 25-30 minutes. Dust with icing sugar and serve warm
