8x large potatoes Sprigs of rosemary Cloves of fresh garlic, peeled. Olive oil Salt & Black pepper Foil
METHOD:
Wash the potatoes and using a sharp knife make slices across the potato without cutting right through. Place the sliced potato on a little foil and top with a sprig of rosemary and clove of garlic.
Drizzle generously with olive oil and season with salt & black pepper. Fold the foil up to create a parcel and place on an oven tray. Do the same for the rest of the potatoes. Bake in the oven at 180C for 45minutes. To serve, remove the foil and spoon gravy over or garnish with fresh chopped parsley.
NOTES
To make garlic oil, place a few garlic cloves in a glass jar or bottle and cover with olive oil or sunflower oil. Leave to stand for a few days before use. Allow the garlic to infuse into the oil before storing in the fridge. Will keep for 2-3 weeks.
